Japanese Green Tea (Matcha) Macarons: A Recipe for These Delicious, Light, and Crunchy Sweet Treats that Perfectly Blend Western Technique with Eastern Flavors

Ingredients:

Dry ingredients:

  • 130 g or 1 cup powdered sugar
  • 80 g, or 0.8 cup, of quality almond flour
  • 2 teaspoons of matcha powder, such as the one from the Japanese Green Tea Company

Wet ingredients:

  • Egg whites from two large eggs or 60 grams of pure egg white
  • 33g or 0.25 cup powdered sugar
  • Half a teaspoon of cream of tartar

Filling ingredients:

  • 8 oz. Cream cheese, room temperature or softened
  • Half a cup of powdered sugar
  • Zest from half of a lemon
  • Lemon juice from half a lemon (you can replace this with yuzu juice too)

FAQs about Making Matcha Macarons

Why are matcha macarons especially tricky compared to regular macarons?

Three reasons. First, matcha (抹茶) is a very fine powder that absorbs moisture differently than other flavoring powders, which can throw off the meringue's water-balance and cause cracked or hollow shells. Second, matcha's color and flavor degrade with heat, so traditional baking temperatures (300-325°F for macarons) can dull both the green color and the matcha taste in the finished cookie. Third, matcha varies a lot in quality — culinary-grade vs. ceremonial, fresh vs. old — and that variation translates into very different macaron results from the same recipe.

Regular macarons are already a high-skill cookie because the meringue technique is delicate. Adding matcha amplifies the difficulty by introducing a moisture-absorbing, heat-sensitive flavoring that has its own quality variability.

The honest version is that consistent matcha macarons require both macaron experience and matcha experience — neither alone is enough. Most home bakers go through a few failed batches before getting reliable results.

What grade of matcha should I use for macarons?

Culinary grade. Culinary matcha is bolder, slightly more astringent, and survives the heat of macaron baking better than ceremonial. Ceremonial matcha is wasted — its delicate umami fades during baking and you'd be paying premium prices for nuance you can't taste in the finished cookie. The card below is the culinary version that holds character through the bake.

Within culinary grade, freshness matters more than brand. Old matcha (especially anything stored more than 6 months after opening) loses both color and flavor, so a fresh culinary matcha will outperform an old ceremonial one for this purpose. Buy from a source with rapid turnover, and use the matcha within 2-3 months of opening.

If you only have ceremonial matcha on hand, it'll still work — the cookies will just taste less matcha-forward than they should. Increase the matcha amount by 25% to compensate.

How do I keep the matcha green color from fading during baking?

Three techniques. First, bake at the lower end of the macaron temperature range (300°F instead of 325°F) and bake for slightly longer to compensate. The lower temperature preserves chlorophyll, keeping the green vivid. Second, use higher-quality matcha — the chlorophyll concentration in fresh ceremonial-tier matcha is much higher than in lower-grade culinary, and you can survive more degradation when you start with more.

Third — controversial but effective — add a tiny pinch of baking soda to the dry ingredients. Alkalinity helps preserve chlorophyll's green color during heat exposure. The drawback is that baking soda can affect macaron texture if you overdo it, so use a very small pinch (less than 1/8 teaspoon for a standard batch) and test the texture with your specific recipe before going bigger.

Some commercial matcha macarons get their color partly from green food coloring on top of (or instead of) actual matcha. That's a workaround if you want the pure green visual without the heat-degradation problem, but it's also a minor shortcut that purists object to.

What's the right matcha-to-almond-flour ratio for macarons?

Roughly 8-12g of matcha per 100g of almond flour gives you a clearly green, clearly matcha-flavored shell without disrupting the macaron structure. Less than 8g and the matcha barely shows; more than 15g and the moisture absorption from the matcha starts affecting the meringue's stability.

If you want a more pronounced matcha character, increase the matcha to 12-15g and reduce the powdered sugar in the shell by an equivalent amount to maintain dry-to-wet ratio. This keeps the moisture balance stable while pushing the flavor.

Sift the matcha thoroughly with the almond flour and powdered sugar — clumps in the dry mix translate to bitter dark spots in the baked shell. Some bakers sift twice for the smoothest distribution.

What fillings pair best with matcha macarons?

White chocolate ganache is the classic — the cocoa butter and dairy carry matcha's flavor without competing, and the sweetness balances matcha's natural astringency. A simple ratio is 1:1 white chocolate to heavy cream by weight, melted together, with optional 2-3g additional matcha whisked in for matcha-on-matcha intensity.

Less common but excellent: red bean (anko) buttercream — the sweet bean paste pairs traditionally with matcha in Japanese desserts and the flavor combination is more interesting than plain matcha on matcha. Yuzu curd works for a citrus-tea pairing. Black sesame buttercream layers richness onto matcha's vegetal notes.

What to avoid: heavy fruit fillings (the fruit competes with matcha for top-note attention), strong chocolate (dark chocolate dominates matcha), and overly sweet fillings (matcha already pairs with sugar; piling on more sweetness flattens the cookie).
