Damaged Goods

Cancellation & Returns:
We understand that we all change our minds sometimes. You can cancel your order within 48 hours of the purchase at no cost. We will simply refund you the full amount. After 48 hours, cancellation is subject to a $10 administration fee whether the item has been shipped or not. Handpicked Only Once a Year on New Grown Crop
Using extreme care, the crop is harvested only once a year by trained farmers who pick only the newly grown tea leaf sprouts by hand.
Processing Traditional Japanese Methods Using Latest Technology
Carefully picked tea leaves are kept in a special refrigerator which sustains temperature and moisture level at the same level as traditional soil layer where the Japanese used to age tea leaves for centuries. Aging tea leaves with this approach brings the right amount of fullness and taste. After specific amount of aging, tea leaves are treated with the right amount of heat, carefully calibrated for the best taste. Tea processed using this approach is called, Kuradashi Cha (Kuradashi Tea) which translates to, "tea taken out from the granary".

Issaku is created by aging newly picked tea leaves for half a year under carefully calibrated equipment under -15 degree Celsius. Before it is aged, the tea is processed up until the Aracha state (crude tea); the tea itself is the same tea as Aracha (crude tea). The difference between Aracha (crude tea) and Kuradashi Tea is that Kuradashi has a more mellow taste with a heavier body, and has a little more astringency making the taste richer than freshly picked tea.

First Crop Green Tea
Compared with the second and the third harvest, first harvest contains less catechin, which brings less astringency. First crop also has less caffeine, but has more amino acid, which is the prime component of the sweetness and umami element.
Green tea plants take in nutrients during winter and deliver the nutrients to the leaves as it blooms in springtime. Traditionally in Japan, the first day of the spring is February 4th and it is called Rissyun (literally translates to "spring stands up") and the 88th night is considered to be the best first day to pick green tea. It is believed that by consuming the tea leaves harvested on this day, a healthy year lies ahead of the consumer. Therefore, the first crops are popular gift items in Japan.
